Oil Sandwich Plates
An oil sandwich plate fits between the engine's oil filter mount and the filter itself. Oil passes through the plate on its way to the filter, and the plate adds ports where you can connect an external oil cooler or fit sensors for oil pressure and temperature gauges. People add one when they want better oil temperature control on a track car, tow rig or hard-driven street build, or when they want more detailed readings than the factory dash provides.

A thermostatic plate only sends oil to the cooler once it has warmed up, which helps the engine reach operating temperature sooner in cold weather.
